We had a dose of real winter weather last week, while I was skipping and smiling down the streets my fellow city dwellers had their grumpy bird faces on. Needless to say people haven’t exactly gotten into the holiday spirit over here in the Big Smoke.
December just feels busy, doesn’t it? I bet we could all use a trip to the beach right about now.
With the heavier winter fare it proves to be more difficult for people to get their greens in. Our bellies could use a boost of digestive enzymes and our schedules a bit of extra wiggle room. With that in mind I bring you another tropical treat with this Pina Coloda Green Smoothie. This is my surefire cheer up breakfast or snack to cure the Grinch or Scrooge in anyone’s heart.
Pineapple is great for digestion and boosting your immune system. Cilantro is one of the only foods that helps to flush the body of heavy metals. I know there are a lot of haters out there, but I promise this smoothie may make you fall in love or at the very least tolerate the green leafy goddess cilantro.
Pina Party Shake
Get drunk on fruit and veg’ goodness.
1 cup of pineapple, cut into chunks
1/3 to ½ cup of fresh cilantro
1 cup of coconut milk (the stuff from coconut dreams works, unless you want the super creamy gorgeous canned stuff for a real treat!)
1/2 cup of water
juice of 1-2 limes
optional but recommended: 1 oz. of liquid E3Live Brain On, or one big handful of arugula, spinach or kale
Place leafy greens on bottom of blender if using, add in the rest of the ingredients. Blend and serve with an extra slice of pineapple and lime on top.
Keeps well in the fridge in an air tight jar for up to one day.
Serves 1 big breakfast serving or 2 snack servings.
